ルバーブ（英: Rhubarb [ˈruːbɑrb]）とは、タデ科ダイオウ属の中の食用とされている栽培品種である。学名は統一されていないが[1] Rheum rhabarbarum などが用いられる。和名はショクヨウダイオウ（食用大黄）[2][3]。シベリア南部原産[3]。多年草で太くて短い地下茎を持つ。根生する大きな葉は有毒。緑白色の小花が集まり、円錐花序を作る。
