汚染物質

食品に意図的に添加されたものと異なり、食品の生産（作物栽培、家畜飼育などを含む）・製造・加工・流通・販売（容器包装など）行為の結果または環境汚染の結果として、食品中に存在する物質のことをいいます。虫や小動物の毛などの異物は含まれません。主な例としては、カドミウム、アフラトキシン（かび毒の一種）、アクリルアミドなどが挙げられます。
