ボッタルガ

ボッタルガは、地中海料理で使われる食材・珍味。ボラやマグロの卵巣を塩漬け・乾燥にしたもので、カラスミの一種[1]。
注釈
- ^ オックスフォード英語辞典の説ではアラビア語形「バターレフ」に「B」音が出現した理由が説明ができない。むしろ、ギリシア語では地域によって卵のことを「ウヴォン、オヴォ、ヴォ」などと発音したので、それらからアラビア語形が派生されたとみるのが妥当とされる。卵を意味するギリシア語は、ポントス方言(原料のボラの産地)では ὠβόν、小アジアでは ὀβό や βό などの形態をとったのである[3]。オックスフォード英語辞典では、アラビア語での最古の用例はアル=マクリーズィーによる1400年頃の記述とするが、これはQuatremère (Journal de Savants誌1848年1月号)が即席で挙げた例であって、それが最古とする考証は不十分だとされる[8]。
