ビート(英語: beet)は、ヒユ科の植物である(今は Betoideae 亜科に含まれる)[1][2][3][4][5]。ヨーロッパ原産で、地中海沿岸で栽培化されたといわれる[6]。当初は薬用として利用された植物であったが、食用されるようになったのは2 - 3世紀ごろである[6]。ビート(ビーツ)の名はケルト語の bette (赤の意)に由来する[6]。
