炭水化物代謝(たんすいかぶつたいしゃ、英:Carbohydrate metabolism)とは、生体内における炭水化物の代謝的な形成(同化という)、分解(異化という)、および相互転換に関与する生化学的プロセス全体のことである。糖代謝または糖質代謝とも呼ばれる。
