ジンギパイン

ジンギパイン（英: zingipain）、ジンギバイン（英: zingibain）またはショウガプロテアーゼ（英: ginger protease、略称: GP、EC 3.4.22.67）は、ショウガ（Zingiber officinale）の地下茎に含まれるシステインプロテアーゼである[1][2][3]。P2位にプロリン残基を持つペプチドの選択的切断を触媒する。GP-I、GP-IIという2つのアイソザイムが存在する[4]。
