The taco, at $1 .99 each, is really a lunch in itself. Besides the chicken, Jalapenos has beef, a chili verde and Baja fish, and, for the meatless crowd, theres a veggie taco with beans, zucchini, bell pepper and tomato. Jalapefios menu covers the spectrum of Mexican cuisine and although the place might be considered a fast-food operation the end product doesnt reflect it. Each item is freshly prepared and doesnt contain lard. The beans are fat free; the meats are stewed with fresh vegetables, chiles and breakfast list which still includes a stomach-packing, two-egg burrito with beans, potatoes, cheese and salsa for an inexpensive $3.59.

During my long-lived salad days, I ate a lot of those suckers. And, of course, Jalapenos has burritos. All kinds, from the $2.99 bean-and-cheese to chicken-and-beef at $3.99. There is also something called the bomber at $5.99. Now, the bomber is one massive bit of eating a large flour tortilla packed with the choice of meat, beans, rice, jack and chedder cheese, salsa, and topped with red enchilada sauce, cheese, sour cream and gua-camole.

As a tall, thin, guy and if really hungry, 1 could eat the whole thing at one sitting. However, Id then be forced to take a nap. Usually, I made two meals out of it, or at least one meal and a good-sized snack for later. Upon discovery, however, that Jalapenos Taco Hut on Pomeroy Avenue was now under new ownership, my first mental-reaction was, Oh, crap! There goes the lunch story. Wrong! New owner Steve Dieterich has kept the Jalapenos great-taste tradition going with a flourish.

As a long-time patron of Jalapenos (although obviously I hadnt been there in awhile), the food on a recent visit was still extremely appetizing, just the right hint of spices, and, as always, there was plenty of it. Dieterich has maintained a great lunch for the money. a lover of soft tacos, I ordered a pair of chicken tacos and a 16-ounce soda with an out-the-door price at just over $5. I should have kept it at just one, though, as they were stuffed with jack and chedder cheese, lettuce, a Good, and healthy. On the menu are tostadas, enchiladas, chimichungas, que-sadillas, and even an all-day-long Blend fruit flavors, Eagle condensed milk and lemon juice for tasty spring treats i Cover each cup with foil.

Meanwhile, for meringue, with clean mixer, beat egg whites with cream of tartar to soft peaks. Gradually beat in sugar, 1 tablespoon at a time; beat 4 minutes longer or until stiff, glossy peaks form and sugar is dissolved. Immediately spread meringue over hot pie, carefully sealing to edge of crust to prevent meringue from shrinking. Bake 15 minutes. Cool 1 hour.

Chill at least 3 hours. Store leftovers covered in refrigerator. Transfer to 9x9-inch baking pan. Cover; freeze 2 hours or until almost firm.

Break frozen mixture into small chunks; transfer to chilled large bowl. With mixer, beat until smooth but not melted. Stir in coconut. Return to pan. Cover; freeze 6 hours or until firm.

To serve, scoop into desserts dishes. Garnish with flowers if desired.
