Wonderful cake! I had this recipe years ago. Misplaced it, and forgot about it for ages. I just came across this one recently, and fixed it for our Christmas luncheon at work. It's just as good as I remembered, and looked very festive with the green color of the pistachio pudding in the cake and frosting. As well as the coconut spinkled on top. I'm now putting this in my permanent file, hopefully never to be misplaced again! :)

I love to bake and cook but never seem to have enough time to do this lately. I have been inspired by all of the recipes that I have seen on this web-site and have vowed to spend more time doing the thing I love to do (cook).
