飛べない鳥として、現生鳥類の中で最大級の鳥であり、アフリカ大陸で固有の独自性をもって生息しています。平均体高は2.5メートル、重さ120キロに達するジャンボサイズですが、走力が非常に優れています。
オーストリッチの皮は、羽毛を抜いた後の丸みのある突起した軸痕（Quill Markクイルマーク）が他の皮革にない、ユニークさをもっています。強靱な皮質で重厚さもあり、立体的な革の特性を活かして、高級品向け素材として幅広く使用されています。
仕上げは、主にクラシックフィニッシュ（Classic Finish）と言われるクイルマークと革を同じ色で染める半マットタイプの顔料仕上げと、サドルフィニッシュ（Saddle Finish）と言われる染料染めの革の表面をブラッシングにより艶を与えて、革らしさとクイルマークを強調した仕上げを行います。
脚部の皮は、レッグと呼ばれ、爬虫類に似たウロコ状の模様が特徴となっています。
鳥の羽根は太古の昔から、貴重な装飾品として使用されてきましたが、オーストリッチの羽毛は、ステージ衣装、インテリア等に利用されています。また、世界的な健康志向から、オーストリッチの肉は、高タンパク、低脂肪のため、近年需要が大きく増加してきました。このため、最近ではヨーロッパ、北米、オーストラリア、中国、イスラエル等々で飼育農場が増加しました。

ダチョウ属（Struthio）は鳥綱ダチョウ目ダチョウ科の属。現生のダチョウとソマリダチョウ2種の他、複数の絶滅化石種が含まれる。
