チアミナーゼ

魚介類などに含まれる酵素で、ビタミンB1を破壊する作用がある。加熱することで破壊作用は失われる。
猫にイカやタコを与えると腰を抜かすとされるのは、チアミナーゼによりビタミンB1が破壊される症状のため。人間も生のイカなどを大量に摂取するとB1欠乏により健康を害するおそれがある。
